Mother Nature & Appetizers!


Ms Mother Nature has had quiet the sense of humor this year hasn't she? We live in Colorado and have actually had a mild winter this year so I really should not complain. I just want Spring to come early this year pretty please?

Waiting on a few more photos to come in for the Confections collection and then I can share all the goodness! I really need to get better about this blogging business. It is always the first thing to fall off of my plate when my plate fills up.

How about a giveaway?? I love to try new recipes and I am in need of one that is super yummy for tomorrow's Super Bowl! Post a comment with a link to your favorite munchie recipe online or fill me in on the goods of what to make and if I choose your recipe I'll send you some yuminess of your own!

We usually make a really yummy sandwich ring- which is really super simple! Just buy 2 refrigerated french bread tubes(We get Pillsbury) Form them together to make a ring, mix together egg whites, Italian seasoning, and a sprinkle of garlic powder in a separate bowl and brush on top. Bake the bread according to the instructions... Cool, then top with your favorite lunch meat, cheeses, and other fixings! :) It's totally customizable and delicious!! Plus not too much prep time so you can enjoy the big game...

Well I love anything to do with tortilla chips here is a basic recipe

Best Chili Cheese Dip/with tortilla chips

1 (8 ounce) package cream cheese, softened
1/2 cup chunky salsa
1 cup shredded cheddar cheese - divided use
1 (16-ounce) can Chili Beans, undrained
3 tablespoons sliced green onions
3 tablespoons pitted sliced black olives (optional)
Tortilla chips

1. Preheat oven to 350°F (175°C).
2. Combine cream cheese and salsa and spread in bottom of 9-inch pie plate. Sprinkle with 1/2 cup cheese. Spread chili beans over shredded cheese. Top with remaining shredded cheese, sliced green onions and olives.
3. Bake for 15 minutes until mixture is thoroughly heated and cheese is melted. Serve with tortilla chips.

Makes 8 servings.

The other day as an appetizer/munchie for my girls' birthday party I made this yummy olive dip. It is great if you like salty food (which I happen to love). Mix 8 oz cream cheese, 1/2 cup mayo, 1 jar green olives (1 cup) chopped, and 2 Tbsp. of olive juice. I serve it with cracker sticks. So simply and tasty!!

My family and I love Espinaca Dip. It's great because you can throw it together the night before and then stick it in the crockpot the next day. It's great with chips or crackers. Everyone always request that I bring this to parties. Super easy and delish! & I usually cut the bread into shapes, so you could cut them into little footballs...

Cheesy "footballs"

1/2 cup mayo
1 tbl dry hidden valley ranch salad dressing mix
1 cup shredded cheddar cheese
1/4 cup grated parmesan cheese
12 slices firm white bread (I actually use soft butternut)

- Preheat broiler. Comine mayo and ranch dressing mix in a medium bowl. Add cheeses, mix well.
- Cut bread slices into squares or shape of your choice. Spread each piece w/ about 1tbl mayo mixture.
- Broil 4" from heat 2-3 minutes until bubbling.

Serves 12. I usually double the ingredients and use a whole loaf of bread.

Ok, if you've ever been to the burgh---you've probably had one of these! A primanti's samwich (pgh slang) is to Pgh what the cheesesteak hoagie is to Philly.

Fresh Italian sliced bread
1 lb of capicola ham (or deli meat of your choice)
1/2 lb of provolone
Fresh cut fries
sliced tomato
Fresh cabbage shredded into coleslaw
Vinegar (1/2 cider/1/2 red wine with garlic clove at the bottom of jar)
Canola Oil

Cut potatoes into fries and add to boiler. While fries are cooking take some capicola ham and heat in skillet---melt provolone cheese on top.

Mix up coleslaw by adding vinegar and canola oil. Salt and pepper to taste.

Layer your sandwich:

Italian bread, meat, cheese, fries, coleslaw, and tomato.

Chase with your favorite beer---if going for Pgh that would be Iron City Light!

Go Stillers (some more Pgh slang for you)

Here is a great munchie:
1 Package hot sausage(or mild according to your taste)
1 package pepper jack cheese
1/2 cup-1 cup of ranch dressing
Wonton Wrappers(you can find them in the frozen or refrigerated section of the store)

Brown sausage and drain. In a bowl, mix entire package of shredded pepper jack cheese, the sausage and about 1/2 cup of ranch dressing. MIx everything up and add more ranch depending on taste &how creamy you want it.)

Place wonton wrappers in a mini muffin pan and fill with the mixture.(makes about 30-36)

Bake at 350 for about 8 minutes until the wonton browns and the cheese melts(may need longer) just watch to make sure they don't burn.

Here is a sweet treat:
Oreo Cheesecake Truffles
1 package oreo cookies
2- 8 oz. packages of cream cheese
1 bag of chocolate almond bark or candy melting chips.

Crush oreos and mix with softened cream cheese
Scoop mixture with teaspoon and make balls.
Place oreo balls in freezer to harden for 30 mintues.
Melt the chocolate bark and dip each ball into the chocolate and cvoer completely.
Place on wax paper and let harden
Makes about 50-60 truffles

Buffalo Chicken Dip - a real favorite around here :)

‎1/2 cup franks wing sauce
1/2 cup ranch or bleu cheese dressing(I use ranch)
1/2 cup shredded cheese
1pkg cream cheese
1 large chicken breast cooked and shredded

Mix all the ingredients and put in a 8x8 Pyrex Dish and bake at 350 for about 20 minutes or until bubbly. Serve with celery or corn chips

Crab Cups

2 cans (6 oz.) white crabmeat, drained, flaked
4 oz. Cream Cheese
2-3 green onions, chopped finely
1/4 cup Mayonnaise
3 dashes Worcestershire sauce
2 dashes Tabasco
Sprinkle of Creole Seasoning (Tony Chachere’s is our fave)
12 won ton wrappers

Preheat oven to 350°F.
Mix together the first 7 ingredients (this can be several hours in advance).
Put 1 won ton wrapper in each well of a 12 muffin cup tin sprayed with cooking spray, letting the the edges of wrappers flap over the sides of cups. Fill with crab mixture.
Bake 20-22 minutes, or until edges of cups are golden brown and filling is heated through.

I have a major sweet tooth! I love to make different shaped little goodies with puffed pasty sheets. And it's easy enough for the kids to help! You don't need much - just frozen puffed pasty sheets, powdered sugar, and whatever filling. You have to leave the pastry sheets out on the counter for a bit to thaw before dealing with them. Then you can cut them into shapes (I have a football cookie cutter, but you can use them for any occasion) then I spread filling on top. Rapsberry or strawberry jam work great, but you can get creative here. I put another footbal cutout of pastry dough on top and put them on a cookie sheet lined with aluminum foil to make the clean up faster. Then you bake them according to the directions on the pastry sheet package. After I take them out, I sprinkle a little powdered sugar around like beignets. You can use a little chocolate icing for the laces if you have that lying around. I have a fleur de lis cutter for my team, the Saints. They look fancy and everyone thinks you did something awesome. Of course, you can make your own pastry dough, but who has time for that when you're getting ready for the big game?!?

Mary Kathryn and I have one of the same favorites - Buffalo Chicken Dip! I use Blue cheese dressing and double the recipe...because that 8x8 would last long around here!
Our other always fall back appetizer is "Dump Salsa." You dump two cans of diced tomatoes, some chopped green onion, a can of shoepeg corn, a can of black beans, a small can of chopped black olives, a couple of cloves of pressed garlic, some lime juice, and LOTS of cilantro (because it takes the canned taste out and I LOVE cilantro!) - all in a bowl and mix it up. It's good just by the spoonful, or on chips with cheese and heated in the microwave.
MMMMM - the best part about the Super Bowl - the food and the commercials!

This is the ultimate appetizer----
I am going to share the super easy version with store bought meatballs- the other version is secret----

Coconut crusted meatballs with a hot apricot peanut digging sauce-

this recipe is for 100-

100 frozen meatballs-
scatter on pans and cover in shredded cocounut (use whole bag)
cook in over till hot and coconut toasted.

place into chaffing dish or crock pot

in a saucepan- add 1/2 jar peanut butter (any kind)
full jar or apricot pineapple preserves (large jar- should be a 2-1 ratio of preserves to peanut butter)
1/2 cup packed brown sugar
few tablespoons of chili garlic paste (I use to taste- want it tp have a kick- it will tame when added to the coconut)
and heat through-

pour over the meatballs
top with diced green onion

it is AMAZING- and the first thing gone at parties!

Wait - my husband just had more input - not an appetizer but a dessert - I make a brownie mix in a 9x13 pan and take it out of the oven about 10 minutes before it is done, then sprinkle the top with chopped peanut butter cups, Golden Grahams cereal, and mini marshmallows, and then stick it back in the oven for another 10 minutes. So good! Even better while watching The Biggest Loser :) - should I feel guilty for that? :)

This can be used as a main dish or appetizer. The way we eat is pour over Tostitos scoops add grated cheese & sour cream YUM!

TACO SOUP

1 lb lean ground beef (or turkey)
1 onion, chopped
1 pkg taco seasonings
1 pkg dry Ranch seasonings
2 large cans diced tomatoes, undrained
1 can Rotel tomatoes, undrained
1 can black beans
1 can pinto beans
1 can whole kernel corn

Brown meat and onion. Drain. Add seasonings. Drain beans and corn. Add to meat along with tomatoes. Simmer until well blended and hot. Eat and enjoy.

Bacon Wrapped Little Smokies are always a football game hit at our house!

Ingredients
1 pound sliced bacon, cut into thirds
1 (14 ounce) package beef cocktail wieners
3/4 cup brown sugar

Directions
Preheat the oven to 325 degrees F (165 degrees C).
Refrigerate 2/3 of the bacon until needed. It is easier to wrap the wieners with cold bacon. Wrap each cocktail wiener with a piece of bacon and secure with a toothpick. Place on a large baking sheet. Sprinkle brown sugar generously over all.
Bake for 40 minutes in the preheated oven, until the sugar is bubbly. To serve, place the wieners in a slow cooker and keep on the low setting.

Yummy Meatballs - Always an (easy!) favorite!

2 bags of frozen meatballs or 1 big bag from Costco
2 cans 16oz sweet & sour sauce or 3 jars 10oz
1 can pineapple chunks drained
1/2 cup teriyaki
1/4 cup light soy sauce

Mix in crockpot, set on low 4 hours or high for 2 hours

I've got 2 no-fail recipes you can try! Both very easy!

Creamy Dill Cucumber Toasties

Ingredients
1 (8 ounce) package cream cheese, softened
1 (.7 ounce) package dry Italian-style salad dressing mix
1/2 cup mayonnaise
1 French baguette, cut into 1/2 inch thick circles
1 cucumber, sliced
2 teaspoons dried dill weed

Directions
1.In a medium bowl, mix together cream cheese, dressing mix and mayonnaise.
2.Spread a thin layer of the cream cheese mixture on a slice of bread, and top with a slice of cucumber. Sprinkle with dill. Repeat with remaining ingredients.

Or...Spicy Bean Salsa...

Ingredients
1 (15 ounce) can black-eyed peas, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (4 ounce) can diced jalapeno peppers
1 (14.5 ounce) can petite diced tomatoes, drained
1 cup Italian-style salad dressing
1/2 teaspoon garlic salt

Directions
1.In a medium bowl, combine black-eyed peas, black beans, corn, onion, green bell pepper, jalapeno peppers and tomatoes. Season with Italian-style salad dressing and garlic salt; mix well. Cover, and refrigerate overnight to blend flavors.
Just make sure to use the jalapenos or it won't have enough kick...if you can't find diced, you can get the slices and dice them up...it's worth it. :)

This is our favorite dip lately, we have brought it to many gatherings and the crock pot always comes home empty... best thing is that it is super simple :)

Spicy Sausage Dip
You need:
2 blocks cream cheese
2 cans orginal Rotel
1 lb Jimmy Dean sausage

Brown and drain the sausage. Add sausage, cream cheese and Rotel (not drained) to crock pot. Heat on high until cream cheese is melted, then lower heat to keep warm. Serve with tortilla chips. So easy and SO yummy :)

"Cheesy Salsa and Egg Bake"

1. In a 9x13 pan, mix one bag of Monterray Jack and one bag of sharp cheddar cheese.
2. In a bowl beat 5 eggs and 4-5 Tbsp. salsa
3. Pour egg and salsa mix over cheese
4. Bake at 375 for 30-45 minutes.
5. Cut into squares when cooled a bit
6. Enjoy!

7 Layer Taco Dip...Fantastic!!

Ingredients:
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese

Directions:
1.In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
2.Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
3.Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

Reubin Dip (Everyone asks for this recipe)
Ingredients:
1/2 cup mayonnaise
1/2 cup Thousand Island dressing
16 ounces sauerkraut, rinsed and squeezed dry
8 ounces shredded corned beef
16 ounces shredded Swiss cheese

Directions:
1.Preheat oven to 350 degrees F (175 degrees C).
2.In a small bowl, combine mayonnaise and dressing.
3.Spread sauerkraut into a 9x13-inch baking dish. Layer corned beef, Swiss cheese, and the mayonnaise-dressing mixture on top of the sauerkraut.
4.Bake for 20 to 25 minutes.

Serve with crackers of your choice:) Have fun:)

This is an appetizer favorite that is always a huge hit! It takes a little bit of time, but everyone will RAVE about it, and it is a nice change from the old appetizer regulars. Great for kids and adults!

Tex-Mex eggrolls with Cilantro Dipping Sauce

Another option - Party Meatballs in Sour Cream Sauce

1 large bag of prepared meatballs (italian style from WM and Sams works well)
2T butter
1/4c flour
1 (10-12oz) can beef consomme
1/2 c sour cream
1 (4oz) can mushrooms (save juice)
1/4c dry white wine

Bake meatballs according to package.

Melt butter, blend in flour. Gradually stir in soup, sour cream, juice from mushrooms and wine. Stir until thickened. Add meatballs and mushrooms. Cover and simmer for 15 minutes. serve in chafing dish or crock pot. Yum!

Here are 2 more. The first is PERFECT for the super bowl if you like going with a theme - three cheese dip for the cheesehead Green Bay Packers fans!

Three Cheese Dip -

make one day ahead and keep in fridge. Serve with
Fritos Scoops. Mix the following in a bowl:
2 cups Sharp Cheddar cheese shredded
2 cups mozarella shredded
1 cup parmigian shredded
2 cups sour cream
1 pint Hellman's mayo (I use a bit less than the full pint)
2 tablespoons cracked black pepper (I use more than this)
2 tablespoons minced onion
2 tablespoons parsley
1 teaspoon season salt
1/2 teaspoon garlic salt

Pinwheels
Make one day ahead and keep logs wrapped in saran wrap in
frige overnite. Slice logs shortly before serving with sharp knife.
Mix:
1 small can chopped black olives
16 oz cream cheeze (softened)
1 bunch green onions, sliced (I use the white part not the green part)
1 packet Hidden Valley Ranch dip mix
1/2 cup chopped red bell pepper
1/2 cup chopped celery
Spread the mixture evenly on 4 large size flour tortillas. Roll up
tightly and wrap in Saran wrap, put in frige overnight.

You NEED to try spinach dip in Hawian bread. The recipe is on the back of the Knox Vegetable dip. It's almost as yummy as Confections. Loving LMN. Wendy Jackman

I make this for my husband and his buddies. They call it "Man Dip"!

1 block velvetta cheese cubed
1 tube Bob Evans Spicy Breakfast Sausage cooked
1 small jar salsa

Combine all ingredients in a bowl and microwave. Stirring occasionally until melted and blended. Serve with tortilla chip.

Stuffed mushrooms (super easy)
1 lb spicy sausage
1 cube cream cheese
a couple cartons of mushrooms
cook sausage, drain, over low heat mix in cream cheese
clean mushrooms, break off steams (scoop a little out) stuff and bake at 350 until hot

I don't know how you are going to choose the best! I have been coming back here all day and redoing my shopping list every time! I just had an amazing dip at a restaurant tonight - Jalepeno Artichoke Dip - this is the closest thing I can find to what I had tonight - SO good! It was served with tortilla chips.

These all sound SO good! I want to print them all! Mine is yummy..just sounds strange until you try it! Total hit though!

Corn dip served w/ Frito's dipping chips

2 cans fiesta corn drained

8 oz pepper jack cheese (if you cant find it shredded, or able to shred yourself..slice into very think pieces and lay over mixture)

1 cup Parm. Cheese

2 cups Mayo

Mix together and place in your fav baking dish. Bake at 350 for 30 minutes..YUMMY! It is gone in no time!

Well this post certainly reminds me of the time when I worked as a waiter for a catering company. It was a great job but the pay was not enough for my mortgage. Now I am working from home selling import export goods online, mostly digital items and gifts for this upcoming Christmas. My profits have been looking great and I was able to pay off my mortgage also. Everyone can do this, work from home and earn big profits online. The question is HOW and WHERE to find info.
